It serves American-American restaurants with contemporary American Indian cuisine. Tocabe first opened in December 2008. It is the only restaurant owned and operated by American Indians in Denver. The restaurant is clean, warm and open, connected to American Indian culture and full of modernity. It originated from Grayhorse: American Indian Restaurant, established in 1989 by the Jacobs family in downtown Denver. The Jacob family is a member of the Osage ethnic tribe. Tocabe used some of Grayhorse's same recipes and expanded the Osage family's recipes to create a new, unique American Indian dish. Its owners are Matt Chandra and Ben Jacobs.
